Ask ten roasters what Yunnan coffee tastes like and you'll get ten vague answers — usually some version of "mild" or "chocolatey." That's a fair starting point, but it undersells what a well-processed Baoshan lot can actually do in the cup.
The Baseline Baoshan Profile
Across most Baoshan lots, expect a nutty aroma with caramel and light floral top notes, a milk-chocolate flavor core with a gentle citrus or stone-fruit acidity, a smooth medium-to-full body, and a clean finish with a caramelized-sugar sweetness. It's an approachable, crowd-pleasing profile rather than an aggressively acidic or funky one.
How Process Changes the Cup
Washed arabica green coffee beans from Baoshan tend toward clarity — nutty, chocolatey, with a cleaner, brighter acidity. Natural process green coffee beans push toward fruit-forward sweetness, with berry and dried-fruit notes and a heavier body. Honey process sits between the two, adding caramel and stone-fruit sweetness with a rounder, lower-acid body.
Altitude and Terroir's Role
Lots grown above 1,700–1,800m, often Bourbon or Typica variety, tend to show more floral complexity and a cleaner cup, while lower-altitude Catimor lots are typically more straightforward — good workhorse coffee for blends and larger-volume programs.
